If you love pepper, you’ll love this chicken. It’s really, really peppery but I guess that’s expected with its name being black pepper chicken and all. Still, if you’re expecting some pepper, raise the bar a little higher and that’s how peppery this is. The chicken is thinly sliced and wrapped with caramelized onions and a fusion of red, green and yellow bell peppers for a splash of bright colors. You can either add the bell peppers in the beginning so they are properly cooked down, or at the end, so they retain their crisp texture, flavor and vibrant color. It all depends on personal preference and taste.
When I think of pepper and stuff I like associated with it, I think back of black pepper steak…a steak covered in black pepper gravy. That stuff was just mmmm. While this chicken doesn’t have as much gravy going on, there’s still enough pepper to make a good meal for pepper lovers. What I really like about this recipe though is just how that little bit of sugar balances out the flavor well and takes it from being peppery and salty to having a nice well-rounded depth of flavor.

Ingredients
- 1 boneless, skinless chicken breast, sliced thinly
- 1/4 yellow onion, sliced
- 1 cup green, red and yellow bell peppers, chopped
- 2 tablespoons thin soy sauce
- 1 tablespoon coarsely ground black pepper
- 1 teaspoon finely ground black pepper
- 1 teaspoon sugar
Instructions
- Over medium high heat, saute the onions until they are translucent
- Toss in black pepper and stir to coat
- Add in chicken and stir-fry until it is no longer pink
- Toss in soy sauce and sugar and continue to stir-fry over medium heat until onions are caramelized
- Add bell peppers and cook briefly for 1 minute, to retain their crispness and color
- Dish and serve hot

I made this dish today. It was so full of flavor!
The soy sauce and sugar give a nice balance to the pepper and peppers. Next time I may add some different vegetables for a little extra variety.
