- 12 oz. spinach
- 1 cup Greek yogurt
- 1 shallot, sliced thinly
- 1 1/2 teaspoons garlic, minced
- 4 green onions, sliced
- 1/2 cup feta cheese
- 1 teaspoon lemon juice
- 2 tablespoons fresh dill, chopped
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
Instructions
- In a skillet over medium-high heat, saute shallots, green onions and garlic in some oil until fragrant.
- Add spinach and stir until spinach cooks down, about 2 minutes.
- Blend the spinach mixture into a rough puree in a food processor or blender. Transfer to a mixing bowl.
- Add lemon juice, yogurt, feta cheese, dill, nutmeg and salt and pepper to taste and mix thoroughly.
- Dish and enjoy.
