Parmesan Crusted Tilapia

Ingredients

  • 2 tilapia fillets
  • 1/4 cup dry Parmesan cheese
  • 1 teaspoon paprika
  • 1 tablespoon parsley, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 lemon, sliced or cut into wedges (optional)

Instructions

  1. Combine cheese, paprika, parsley, salt and pepper
  2. Brush both sides of the fillet with olive oil
  3. Dredge the fillets in the cheese mixture
  4. Line a baking sheet with foil and arrange the fillets on it
  5. Pat the leftover mixture onto the fillets
  6. Bake at 400 degrees F for 12 minutes. If the tilapia is not yet crisp and browned, broil at 450 degress F for another 5 minutes
  7. Dish and serve hot with lemon wedges
