Makes 10 skewers


Ingredients

Scale
  • 1 lb. boneless, skinless chicken breasts / chicken tenders, cubed
  • 1 lb. turkey bacon slices, halved
  • 2 cups pineapple chunks

Marinade:

  • 2 teaspoons light soy sauce
  • 2 teaspoons brown sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ginger, minced
  • 1/4 teaspoon garlic, minced

Instructions

  1. Mix the marinade ingredients and marinate the chicken in the refrigerator for 2 hours
  2. Wrap each piece of chicken with half a slice of bacon and thread it on the skewers, alternating with pineapple chunks
  3. Heat the grill until it’s sizzling and brush or mist lightly with some oil
  4. Arrange the skewers on the grill and cook for 3-5 minutes on each side or until chicken juices run clear
  5. Dish and serve hot

Notes

Cooking time may differ based on type of grill or heat; make sure the chicken is cooked thoroughly before serving
