Crispy Tacos

Taco shells are stuffed with refried beans, shredded chicken, Rotel and Mexican cheese then baked until crispy and warm.

Makes: 10 Tacos

Great for Taco Tuesday, game day or an easy weeknight dinner

Ingredients:

taco shells

onions

taco seasoning

rotisserie chicken

refried beans

Rotel

shredded cheese

I used a shortcut with rotisserie chicken but you can also use leftover chicken or switch out chicken for other kinds of taco meat.

Enjoy them as is or pair them with toppings like guacamole, lettuce, red onions, jalapenos, sour cream or Cotija cheese.

• Use salsa instead of Rotel • Add lime juice for zest • Spice it up with jalapeños, chipotle/ancho chili powder or chili powder.
