Description
Spinach strawberry salad is easy to love with spinach, strawberries, crunchy pecans and creamy feta tossed in a homemade poppy seed dressing.

- 10 oz. fresh baby spinach
- 1 lb. fresh strawberries, stems removed, hulled and thickly sliced
- 1/2 small red onion, thinly sliced
- 3/4 cups pecans, roughly chopped
- 4 oz. feta cheese
BALSAMIC POPPY SEED DRESSING (MAKES 1 CUP)
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 1/2 teaspoons poppy seeds
- 3 tablespoons honey, or less to taste
- 1 teaspoon Dijon mustard
- 1/2 teaspoon coarse sea salt
- 1/8 teaspoon pepper
Instructions
- Make the dressing by combining olive oil, balsamic vinegar, poppy seeds, honey, mustard and salt and pepper to taste. Whisk until well combined.
- Add spinach, strawberries and red onions to a large serving bowl. Drizzle with dressing and toss to mix.
- Top with pecans and feta and toss again to lightly combine.
- Dish and serve fresh.

Mix up the greens – Switch up spinach with other salad blends or baby spring mixes.

Add more fruit – Try adding some fresh blueberries or mandarin oranges for a pop of color and more flavor.

Switch nuts – If you’re not a fan of pecans, try some toasted sliced almonds or chopped walnuts instead.

Add some protein – Add some cooked sliced or diced chicken.

Switch up cheese – Experiment with other crumbled cheeses like goat cheese, blue cheese, or gorgonzola cheese.

Make it creamy – Make a creamy poppy seed dressing by adding a few tablespoons of mayonnaise or using mayonnaise, milk, or Greek yogurt as a base instead of olive oil.
