Description
This easy, roasted Parmesan zucchini is generously topped with Parmesan then baked till golden brown for tender veggies with a subtle crunch.

- 3 large zucchini (about 1.5 lbs), sliced into 1/4″ rounds
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1/2 teaspoon coarse sea salt, or to taste
- 1/8 teaspoon pepper
- 1/2 cup Parmesan cheese, grated
Instructions
- Add sliced zucchini, olive oil, garlic powder, salt and pepper to a large mixing bowl. Toss to mix and coat the zucchini well in the olive oil and seasonings.
- Transfer zucchini rounds to a baking sheet and arrange in a single layer.
- Top zucchini rounds with a generous sprinkle of grated Parmesan cheese.
- Bake in the center rack at 400°F for 9-10 minutes.
- Broil for about 2-3 minutes, or until the cheese tops are golden brown.
- Dish and serve warm.
