Roasted Parmesan Zucchini

Description

This easy, roasted Parmesan zucchini is generously topped with Parmesan then baked till golden brown for tender veggies with a subtle crunch.

Ingredients

  • 3 large zucchini (about 1.5 lbs), sliced into 1/4″ rounds
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1/2 teaspoon coarse sea salt, or to taste
  • 1/8 teaspoon pepper
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Add sliced zucchini, olive oil, garlic powder, salt and pepper to a large mixing bowl. Toss to mix and coat the zucchini well in the olive oil and seasonings.
  2. Transfer zucchini rounds to a baking sheet and arrange in a single layer.
  3. Top zucchini rounds with a generous sprinkle of grated Parmesan cheese.
  4. Bake in the center rack at 400°F for 9-10 minutes.
  5. Broil for about 2-3 minutes, or until the cheese tops are golden brown.
  6. Dish and serve warm.
  7. Enjoy!

Notes

  • Baking and broiling times may vary, depending on your oven.
  • Add some zest – Brighten things up with a drizzle of lemon juice or with some lemon zest.
  • Add more seasoning – Season with Italian seasoning or with fresh chopped herbs like basil, oregano, parsley, or thyme.
