Description
This hot pepperoni and olive penne pasta uses a few ingredients but has many ways to build on the flavor.

- 1 lb. penne pasta, cooked until al dente
- 1 yellow onion, diced
- 3 cloves garlic, diced
- 6 oz. pepperoni, diced
- 1 jar (9.5 oz.) kalamata/black olives, sliced
- 1 can (30 oz.) petite diced tomatoes
- 1 jar (24 oz.) marinara sauce
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside.
- Meanwhile in a Dutch oven over medium-high heat, saute the onions in some olive oil until fragrant, about 5 minutes.
- Add in diced garlic and saute for about 30 seconds.
- Toss in pepperoni and olives and saute for 5 minutes.
- Add diced tomatoes, marinara sauce and seasoning and stir to mix. Do a taste test and adjust seasonings as needed.
- Simmer covered on low heat for 10-15 minutes or up to several hours.
- Dish and serve hot with Parmesan cheese.
