Pepperoni and Olive Penne Pasta

Description

This hot pepperoni and olive penne pasta uses a few ingredients but has many ways to build on the flavor.


Ingredients

Units Scale
  • 1 lb. penne pasta, cooked until al dente
  • 1 yellow onion, diced
  • 3 cloves garlic, diced
  • 6 oz. pepperoni, diced
  • 1 jar (9.5 oz.) kalamata/black olives, sliced
  • 1 can (30 oz.) petite diced tomatoes
  • 1 jar (24 oz.) marinara sauce
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Meanwhile in a Dutch oven over medium-high heat, saute the onions in some olive oil until fragrant, about 5 minutes.
  3. Add in diced garlic and saute for about 30 seconds.
  4. Toss in pepperoni and olives and saute for 5 minutes.
  5. Add diced tomatoes, marinara sauce and seasoning and stir to mix. Do a taste test and adjust seasonings as needed.
  6. Simmer covered on low heat for 10-15 minutes or up to several hours.
  7. Dish and serve hot with Parmesan cheese.
  8. Enjoy!
